Title : Food bio decontamination and probiotics
Abstract:
Contaminations in food like heavy metals and have toxins increased during the last decades due to industrialization and food production process. WHO introduced probiotic as the live microorganisms which provide many health benefits on their consumers. The most common probiotics used in food industry are Lactobacillus, Bifidobacterium, Enterococcus, Bacillus, Streptococcus and Saccharomyces. Probiotics application in food contaminations such as toxins and heavy metals removal has been reported as a favorable decontamination method for being environmentally friendly, economical, cheap and easy to apply. These useful microorganisms used as helpful biological sorbent for toxins and heavy metals and reducing their hazardous health problems. The purpose of this review is to summarize the role of probiotics in food bio-decontamination processes. After a quick glimpse of the worthy properties of probiotics, their structure is mentioned and also their potential role of for bioremoval of decontaminants is described. In addition, the role of various factors in removal yield and the decontamination mechanism are explained. Finally, some samples of food stuffs bio decontamination are discussed. Although more evaluations are required to clarify the bio-removal mechanism and the best conditions for increasing the biosorption efficiency. While several studies examined probiotics bacteria in foods, more future studies are needed on their practical applications in the food industry.
